WONDERFUL WEEKEND! :)

This weekend was SUPER busy, but SOOO much freakin fun!

Friday, was DATE NIGHT! <3... It was really nice to have dinner together and catch up. It seems like most of our time together lately has been surrounded by so many distractions and busy life that we hadn't had much time to connect.

I think it is definitely important to have that one on one time, especially when your man is gone every other week training.

date night = SUCCESS!!

Saturday, my girlfriend Amanda and I hit up the beach for the 1st time this year... The weather was in the 70's and the breeze was just about perfect. 



This was such a teaser for me. I am dieing for SUMMER to get here ALREADY!! I really want to get up [and stay up] on the surf board this year... HOPEFULLY yoga has helped improve my balance and I can pull off some real surfing... not just some half ass stand up n wipe out type stuff. We'll see!


Saturday night, we got the entire team together and headed down to Wilmington for dinner and cocktails.

We had a blast... and maybe a few too many cocktails :)

Dinner started out at Mike and I's "spot"... The Little Dipper.

 It had been a while since we had been, and I missed it... THE FOOD WAS DELICIOUS & the company was even better!

FUN TIMES!!

then Sunday, I traveled a bit to visit my favorite grocery store... Harris Teeter.

Unfortunately, Jacksonville has crap for grocery stores. The commissary is my go to place most of the time...:( I prefer to buy my meats from Harris Teeter. They carry all natural meats [none of that steroid/hormone crap] which is ALMOST impossible to find around here.

I am such a dork. I get RIDICULOUSLY excited when I get to visit Harris Teeter, Fresh Market, Whole Foods, Trader Joes, ect.

This trip made my day. :) (I know, DORK!) 

when I got home we grilled out some tasty steaks...

CHOW recipe I LOVE!

Annie's Fruit Salsa w/ Cinnamon Chips



This is a great crowd pleaser, I make this when I have time... it takes a good hour or so to prepare!

Ingredients:


  • 2 kiwis, peeled and diced




  • 2 Golden Delicious apples - peeled, cored and diced




  • 8 ounces raspberries




  • 1 pound strawberries




  • 2 tablespoons white sugar




  • 1 tablespoon brown sugar




  • 3 tablespoons fruit preserves, any flavor




  • SOME OF THESE....

     
    OR
    -10 (10 inch) flour tortillas
    -butter flavored cooking spray
    -2 tablespoons cinnamon sugar

    Directions:
    1. In a large bowl, thoroughly mix kiwis, Golden Delicious apples, raspberries, strawberries, white sugar, brown sugar and fruit preserves. Cover and chill in the refrigerator at least 15 minutes.
    2. Preheat oven to 350 degrees F (175 degrees C).
    3. Coat one side of each flour tortilla with butter flavored cooking spray. Cut into wedges and arrange in a single layer on a large baking sheet. Sprinkle wedges with desired amount of cinnamon sugar. Spray again with cooking spray.
    4. Bake in the preheated oven 8 to 10 minutes. Repeat with any remaining tortilla wedges. Allow to cool approximately 15 minutes. Serve with chilled fruit mixture.

    Good morning everyone!!
    my Internet has been down for the past few days :( sorry if I seemed M.I.A.!

    I wanted to share with you that I finally got THE letter, and I didn't even have to stalk my mail lady!!

    
    It came on Saturday while I was at yoga class... I  had plans to grocery shop afterwards so I told my hubby to call me AS SOON as the mail came. He didn't.

    I called after yoga, and he told me the letter STILL wasn't there and that all we got was junk mail this.. junk mail that. ERRRRR, I WAS FURIOUS!!! Well, really I was just SO DISAPPOINTED.

    I went to the grocery store then it dawned on me... maybe Mike was fibbing to me, so I called him again. Still, I got "Amy, you know I wouldn't lie to you. Its not here. You need to be more patient."

    hmmmmm.............

    I got home to find my husband out in the driveway with this smirk on his face... I knew it!!!

    "you know I wouldnt lie to you Amy" I call BULL SHIT on that line!! lol

    He had opened the letter and taped my acceptance letter to the front door. I would have killed him if I hadn't been SO happy that I got in...whhheeewww I FELT SO RELIEVED, and still do!! There were only 18 spots available so I feel pretty lucky!
    Wondering what he would have done if the letter was a denial letter... tried to reseal the envelope? haha
     Anyway, just wanted to share the good news... we'll be in touch!
